This is the first post in my meal prep for baby series. I am so excited to get my freezer stash going. It will be so nice not to have to worry about making a nice comforting dinner and wrangling a new born. I have been thinking about prepping meals for a while now but every time I thought about, coming up with a menu, then spending a bunch of money all at once, then bringing all those groceries home and cooking a bazillion meals all at once…. I would completely lose interest. So instead I made a list of 10 meals my family loves. Now once or twice a week I will buy enough ingredients to make 2 or 3 batches of one of the meals, that one we can eat one for dinner and I can put the extra one or two in the freezer for later.
**Pro tip: clean out the freezer before adding the meals, I didn’t do that…. But I will now.
My first venture, Sausage Lasagna.
- 9 lasagna noodles
- 1 24 ounce jar spaghetti sauce
- 1 lb sage sausage cooked
- 3 C ricotta cheese
- 1 C parmesan cheese
- 2 T parsley flakes
- 1 egg
- 4 C cheddar cheese
Boil noodles until soft, strain and rinse in cold water. Cook sausage until fully cooked. In a large mixing bowl, combine ricotta, parmesan, parsley and egg. In a 9×13 pan begin layering starting with a thin layer of sauce covered by noodles, spread ricotta mixture on the noodles then sprinkle with sausage, cover the sausage in a thin layer of sauce followed by cheddar cheese. Repeat two more times ending with a thick layer of cheddar cheese. Bake in oven at 350 degrees for 20 minutes or until bubbling.
For baby prep I made a double batch and assembled the other lasagna in an aluminum 9×13 pan and cooked the same as above. After I let it cool to room temp, covered with aluminum foil and wrote the name and date on top before adding to the freezer.
