This is Meal #2 in my meal prep for baby series. Meal #1 was a yummy sausage lasagna. But anyway, here we go. My mother has been making this Mac & Cheese since I was a tiny baby and it’s still one of my favorites. When mom would say she was making Mac & Cheese for dinner, the next question would always be “What Kind?” to which she would reply “The Good Kind.” And trust me, it is the good kind. The best part is it’s amazingly simple to make.
- 1 lbs Elbowroni noodles
- 1 large onion
- ½ cup butter
- ⅓ cup flour
- 4 cups milk
- Worcestershire sauce
- 4 cups cheese
In a large pot boil water to cook the noodles. Once boiling add the noodles until they are almost done. In a sauce pan, melt the butter on medium heat and saute onions. Once Onions are fully cooked sprinkle in the flour until the butter is completely absorbed. Once absorbed pour in the milk, worcestershire sauce, and salt and bring to a boil. After the mixture has boiled remove the pan from the heat and add in the cheese until melted, add more cheese to taste. Pour the sauce over noodles.
At this point you could serve the Mac & Cheese as is. Or you could pour it into a casserole dish sprinkle the cheese on top and bake at 350 degrees until the cheese has melted. Better yet add some bacon to the top…. Yum… that sounds good.
To use this for baby prep I just doubled the recipe and poured the second batch into an aluminum freezer pan and melted some cheese on top. Then left it to cool to room temperature, wrapped it in aluminum foil and wrote the name and date on the top.
I am so thrilled to see my freezer stash growing, it just makes me so happy.
