My mom used to make English Breakfast Scones for us as kids but it has been such a long time since I have had them. But I was craving them and had to experiment a bit.
I am a list maker. If I don’t have some sort of list in front of me, I probably won’t get anything done, or I’ll forget half of what I need. So naturally when I got pregnant I started making lists like this one. Lots of people warned me about making this list, because I won’t know how big baby is going to be. This is Meal #2 in my meal prep for baby series. Meal #1 was a yummy sausage lasagna. But anyway, here we go. My mother has been making this Mac & Cheese since I was a tiny baby and it’s still one of my favorites. This is the first post in my meal prep for baby series. I am so excited to get my freezer stash going. It will be so nice not to have to worry about making a nice comforting dinner and wrangling a new born. I have been thinking about prepping meals for a while now but every time I thought about, coming up with a menu, then spending a bunch of money all at once, then bringing all those groceries home and cooking a bazillion meals all at once…. I would completely lose interest. So instead I made a list of 10 meals my family loves. Now once or twice a week I will buy enough ingredients to make 2 or 3 batches of one of the meals, that one we can eat one for dinner and I can put the extra one or two in the freezer for later. We first brought home our tiny bulldog puppy, determined to do everything exactly right. Starting with her food. So we bought her the most expensive dry food in the store and were sure we were making the right decision. Then life kicked in and we couldn’t afford to spend as much on her food.
