I was so excited to go on my hospital tour and it was actually a lot of fun. I am a list maker. If I don’t have some sort of list in front of me, I probably won’t get anything done, or I’ll forget half of what I need. This is Meal #2 in my meal prep for baby series. Meal #1 was a yummy sausage lasagna. But anyway, here we go. My mother has been making this Mac & Cheese since I was a tiny baby and it’s still one of my favorites. This is the first post in my meal prep for baby series. I am so excited to get my freezer stash going. It will be so nice not to have to worry about making a nice comforting dinner and wrangling a new born. I have been thinking about prepping meals for a while now but every time I thought about, coming up with a menu, then spending a bunch of money all at once, then bringing all those groceries home and cooking a bazillion meals all at once…. I would completely lose interest. So instead I made a list of 10 meals my family loves. Now once or twice a week I will buy enough ingredients to make 2 or 3 batches of one of the meals, that one we can eat one for dinner and I can put the extra one or two in the freezer for later.
