I knew I had entered my nesting period when I insisted on cleaning our self cleaning oven by hand. The thing is, the oven was clean… but not like new clean, it has been stained by years of use, and the self cleaning feature only burns away the dirt. It doesn’t remove the stains and such. It may be a couple weeks until they can get you in based on how many weeks pregnant you are. I was in denial, so I didn’t take a pregnancy test until I was about eight weeks pregnant. Which was actually great for me because, I only had to wait a couple days to go to my first doctor’s appointment. But Boy-Oh-Boy were those few days excruciating. I am not a patient person and waiting a few days for an appointment was a nightmare. The moment we found out we were having a baby my husband has been ecstatic, and terrified and worried, and so have I. The advantage I have, is getting all the attention. This is Meal #2 in my meal prep for baby series. Meal #1 was a yummy sausage lasagna. But anyway, here we go. My mother has been making this Mac & Cheese since I was a tiny baby and it’s still one of my favorites. This is the first post in my meal prep for baby series. I am so excited to get my freezer stash going. It will be so nice not to have to worry about making a nice comforting dinner and wrangling a new born. I have been thinking about prepping meals for a while now but every time I thought about, coming up with a menu, then spending a bunch of money all at once, then bringing all those groceries home and cooking a bazillion meals all at once…. I would completely lose interest. So instead I made a list of 10 meals my family loves. Now once or twice a week I will buy enough ingredients to make 2 or 3 batches of one of the meals, that one we can eat one for dinner and I can put the extra one or two in the freezer for later.
