My mom used to make English Breakfast Scones for us as kids but it has been such a long time since I have had them. But I was craving them and had to experiment a bit.
Summer is tough on my two English Bulldogs, and this summer we’re all sweating it out without air conditioning. I felt so bad for my pups, I needed to find a way to keep them cool. I found a few awesome looking products, cooling vests and mats. But of course my brain is always set to DIY and I thought to myself “why pay $50 bucks for that when I could make one myself?” and that’s just what I did. I have an unhealthy obsession with to-do lists. I will take more time coming up with things to put on my list, than I do actually accomplishing what I wrote down. So true to form I made an extensive list of things to do before our little man arrives. I wrote down what I could think of off the top of my head and then spent another half an hour searching the web for more things that I was sure I needed to do but couldn’t think of myself. Then I decided to list it here because I can’t imagine I’m the only crazy list lady that needs a little To-Do inspiration. I am a list maker. If I don’t have some sort of list in front of me, I probably won’t get anything done, or I’ll forget half of what I need. So naturally when I got pregnant I started making lists like this one. Lots of people warned me about making this list, because I won’t know how big baby is going to be. This is Meal #2 in my meal prep for baby series. Meal #1 was a yummy sausage lasagna. But anyway, here we go. My mother has been making this Mac & Cheese since I was a tiny baby and it’s still one of my favorites. When mom would say she was making Mac & Cheese for dinner, the next question would always be “What Kind?” to which she would reply “The Good Kind.” And trust me, it is the good kind. This is the first post in my meal prep for baby series. I am so excited to get my freezer stash going. It will be so nice not to have to worry about making a nice comforting dinner and wrangling a new born. I have been thinking about prepping meals for a while now but every time I thought about, coming up with a menu, then spending a bunch of money all at once, then bringing all those groceries home and cooking a bazillion meals all at once…. I would completely lose interest. So instead I made a list of 10 meals my family loves. Now once or twice a week I will buy enough ingredients to make 2 or 3 batches of one of the meals, that one we can eat one for dinner and I can put the extra one or two in the freezer for later.
